Description

This flavorful chipotle shredded chicken is perfect for tacos or served over rice.


Ingredients

  • 34 boneless skinless chicken breasts (about 1 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, diced
  • 1 can (14 oz) fire-roasted tomatoes
  • 23 chipotle peppers in adobo sauce (to taste)
  • 1 tsp ground cumin
  • 1 cup low-sodium chicken broth
  • Fresh cilantro (for garnish)

Instructions

  1. Place chicken breasts in a pot, cover with water, and bring to a gentle boil. Simmer for 15-20 minutes until cooked through.
  2. In a skillet, heat olive oil and sauté onions and garlic until soft and translucent (about 5 minutes).
  3. Stir in tomatoes, chipotle peppers, cumin, salt, and pepper; cook for an additional 3 minutes.
  4. Remove cooked chicken from the pot and shred it using two forks.
  5. Add shredded chicken to the skillet with the tomato mixture and stir in chicken broth. Simmer on low heat for about 10 minutes.
  6. Garnish with fresh cilantro and serve in tacos or over rice.
