Description
A delicious chocolate cake with a mint filling and ganache topping.
Ingredients

- 200g plain flour
- 200g granulated sugar
- 75g cocoa powder
- 1 ½ tsp baking powder
- 1 ½ tsp bicarbonate of soda
- 1 tsp salt
- 2 large eggs
- 240ml whole milk
- 120ml vegetable oil
- 2 tsp vanilla extract
- 240ml boiling water
- 400g sweetened condensed milk
- 1 tsp peppermint extract
- Green food colouring (optional)
- 200g dark chocolate, chopped
- 200ml double cream
- Whipped cream
- Chocolate shavings
- Fresh mint leaves
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, sugar, cocoa powder, baking powder, bicarbonate of soda, and salt.
- Add eggs, milk, oil, and vanilla; mix until smooth.
- Stir in boiling water until well combined.
- Pour batter into a greased cake pan and bake for 30-35 minutes.
- For the mint filling, combine sweetened condensed milk, peppermint extract, and food coloring in a bowl.
- Once the cake cools, poke holes with a fork and pour the mint filling over it.
- For the ganache, heat double cream until simmering, then pour over chopped chocolate and stir until melted and smooth.
- Let the ganache set, then top with whipped cream, chocolate shavings, and mint leaves.

Notes
- Make sure the ganache is fully set before serving for best results.
- Adjust the peppermint extract to taste.
