Description

A delicious chocolate cake with a mint filling and ganache topping.


Ingredients

Scale
  • 200g plain flour
  • 200g granulated sugar
  • 75g cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp bicarbonate of soda
  • 1 tsp salt
  • 2 large eggs
  • 240ml whole milk
  • 120ml vegetable oil
  • 2 tsp vanilla extract
  • 240ml boiling water
  • 400g sweetened condensed milk
  • 1 tsp peppermint extract
  • Green food colouring (optional)
  • 200g dark chocolate, chopped
  • 200ml double cream
  • Whipped cream
  • Chocolate shavings
  • Fresh mint leaves

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, cocoa powder, baking powder, bicarbonate of soda, and salt.
  3. Add eggs, milk, oil, and vanilla; mix until smooth.
  4. Stir in boiling water until well combined.
  5. Pour batter into a greased cake pan and bake for 30-35 minutes.
  6. For the mint filling, combine sweetened condensed milk, peppermint extract, and food coloring in a bowl.
  7. Once the cake cools, poke holes with a fork and pour the mint filling over it.
  8. For the ganache, heat double cream until simmering, then pour over chopped chocolate and stir until melted and smooth.
  9. Let the ganache set, then top with whipped cream, chocolate shavings, and mint leaves.
  10. Slice and enjoy your Chocolate Mint Poke Cake!
