This delicious banana walnut bread is moist and flavorful, perfect for breakfast or as a snack.
Ingredients
Scale
- 12 tablespoons butter (softened)
- 1 package cream cheese (8 oz., softened)
- 1 1/2 cups sugar
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups mashed bananas (about 3 large bananas)
- 1 cup walnuts
Instructions
- Preheat the oven to 350°F and spray two 8×5 loaf pans with cooking spray and place a piece of parchment paper inside.
- In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, beating just until blended after each addition.
- In a medium bowl, combine flour, baking powder, baking soda, and salt, and mix until combined; gradually add to butter mixture, beating at low speed just until blended.
- Fold in bananas and walnuts until just combined. Spoon batter into the prepared loaf pans.
- Bake for 55-60 minutes or until a long wooden pick inserted in the center comes out clean and the sides pull away from the pan. Shield with aluminum foil during the last 15 minutes to prevent browning, if necessary. Cool bread in pans on wire racks for 10 minutes.
Notes
- For best results, use ripe bananas.
