Description
A delicious and customizable Ground Turkey Taco Bowl with rice and your favorite toppings.
Ingredients

- 1 lb ground turkey (7% fat)
- 2 Tablespoons olive oil
- 1 Tablespoon taco seasoning
- 1 small onion
- 4 large garlic cloves
- Salt and black pepper to taste
- ½ cup chicken stock
- Guacamole
- Pico de gallo
- Canned sweet corn
- Shredded sharp cheddar cheese
- Black beans (you can substitute with pinto beans)
- Fresh cilantro
- Lime wedges
- Sour cream
- Lettuce
- 4–6 cups cooked cilantro lime rice
Instructions
- Place a skillet on medium heat, add olive oil, and heat up until hot.
- Add the chopped onion and garlic, and sauté for 2-3 minutes, stirring occasionally, until the onion is soft and fragrant.
- Add the ground turkey to the sautéed aromatics and break it up with a spatula. Leave undisturbed for 1 to 2 minutes before stirring to give the bottom a nice sear/crust.
- Continue to stir until the turkey is no longer pink.
- Season with salt and black pepper, sprinkle over the taco seasoning on the turkey, and stir to combine.
- Pour in the chicken stock, reduce the heat, and simmer until the liquid has reduced and the turkey is juicy and well seasoned. Remove from the heat.
- Add cooked rice to a bowl, then top generously with ground turkey, followed by your favorite toppings such as guacamole, black beans, sweet corn, cheddar cheese, and pico de gallo.
- Serve with fresh cilantro and a squeeze of lime, and enjoy.
Notes
- Feel free to use any type of cooked rice you prefer.
