Description

A delicious and customizable Ground Turkey Taco Bowl with rice and your favorite toppings.


Ingredients

Scale
  • 1 lb ground turkey (7% fat)
  • 2 Tablespoons olive oil
  • 1 Tablespoon taco seasoning
  • 1 small onion
  • 4 large garlic cloves
  • Salt and black pepper to taste
  • ½ cup chicken stock
  • Guacamole
  • Pico de gallo
  • Canned sweet corn
  • Shredded sharp cheddar cheese
  • Black beans (you can substitute with pinto beans)
  • Fresh cilantro
  • Lime wedges
  • Sour cream
  • Lettuce
  • 46 cups cooked cilantro lime rice

Instructions

  1. Place a skillet on medium heat, add olive oil, and heat up until hot.
  2. Add the chopped onion and garlic, and sauté for 2-3 minutes, stirring occasionally, until the onion is soft and fragrant.
  3. Add the ground turkey to the sautéed aromatics and break it up with a spatula. Leave undisturbed for 1 to 2 minutes before stirring to give the bottom a nice sear/crust.
  4. Continue to stir until the turkey is no longer pink.
  5. Season with salt and black pepper, sprinkle over the taco seasoning on the turkey, and stir to combine.
  6. Pour in the chicken stock, reduce the heat, and simmer until the liquid has reduced and the turkey is juicy and well seasoned. Remove from the heat.
  7. Add cooked rice to a bowl, then top generously with ground turkey, followed by your favorite toppings such as guacamole, black beans, sweet corn, cheddar cheese, and pico de gallo.
  8. Serve with fresh cilantro and a squeeze of lime, and enjoy.

  • Feel free to use any type of cooked rice you prefer.
