Description

A delicious twist on traditional Wellington, featuring a savory beef and mushroom filling wrapped in flaky puff pastry.


Ingredients

  • 1 small yellow onion, finely chopped
  • 8 ounces mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 pound ground beef
  • 1 tablespoon Dijon mustard
  • 1 package puff pastry (2 sheets), thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the mushroom filling (duxelles): In a skillet over medium heat, warm the olive oil. Add the chopped onion and cook until softened, about 3–4 minutes. Stir in the mushrooms and cook until the mixture has released most of its moisture and is golden brown—about 8–10 minutes. Add garlic, thyme, salt, and pepper, and cook for another minute. Set aside to cool.
  2. Make the beef mixture: In a mixing bowl, combine the ground beef with the cooled mushroom mixture and Dijon mustard. Mix until just combined—don’t overwork it or the texture will be tough.
  3. Roll and fill the pastry: Lightly flour your work surface and roll out the thawed puff pastry sheets. Cut each sheet into 9 squares (18 total). Place about 1 tablespoon of the beef mixture in the center of each square.
  4. Fold and seal: Fold each square into a small parcel—either diagonally for a triangle or bring all four corners to the center for a classic pouch shape. Pinch the edges to seal well. Place on a parchment-lined baking sheet.
  5. Brush and bake: Preheat your oven to 400°F (200°C). Brush each mini Wellington with the beaten egg. Bake for 18–22 minutes or until golden brown and puffed.
  6. Serve warm: Let cool for a few minutes before serving. They’re best warm, when the pastry is crisp and the center is juicy and flavorful.
