A refreshing chicken salad with grapes and almonds, perfect for sandwiches or lettuce wraps.
Ingredients

- 3 cups cooked chicken, shredded (rotisserie works great)
- 1 cup red seedless grapes, halved
- 1/2 cup celery, diced
- 1/4 cup red onion, finely minced
- 1/2 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup slivered almonds (optional)
Instructions
- In a large bowl, combine the shredded chicken, halved grapes, celery, and red onion.
- In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, salt, and pepper.
- Pour the dressing over the chicken mixture and fold gently until everything is evenly coated.
- Stir in the slivered almonds if using for extra crunch.
- Cover and refrigerate for at least 1 hour before serving.
- Serve on bread, croissants, or in lettuce wraps.
Notes
- This salad is best served chilled.
- Feel free to substitute chicken with turkey or roasted vegetables for a different flavor.
