Description

A delightful lemon garlic shrimp pasta with asparagus, perfect for a quick and delicious meal.


Ingredients

  • 8 oz spaghetti or fettuccine
  • 1 lb shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 4 cloves garlic (minced)
  • Juice of 1 large lemon
  • 2 tbsp extra virgin olive oil
  • ½ cup fresh Parmesan cheese (grated)
  • Salt & pepper to taste

Instructions

  1. Cook the pasta: Boil salted water in a large pot, add pasta, and cook until al dente according to package instructions. Drain and reserve some pasta water.
  2. Sauté shrimp: In a skillet over medium heat, heat olive oil, add minced garlic, then shrimp seasoned with salt & pepper. Cook until shrimp are pink and opaque (about 3-4 minutes).
  3. Add asparagus: Toss chopped asparagus into the skillet and cook for another 3 minutes until tender but still crisp.
  4. Combine with lemon: Squeeze fresh lemon juice over the shrimp-asparagus mixture, stirring to combine flavors.
  5. Toss with pasta: Mix the drained pasta with the shrimp mixture, adding reserved pasta water for desired consistency.
  6. Finish & serve: Grate fresh Parmesan over the top and serve hot with extra lemon wedges.

Notes

  • For a spicy kick, add red pepper flakes when sautéing the shrimp.
  • This dish is best served fresh but can be stored in the refrigerator for up to 2 days.
