Description

Delicious vegan gingerbread cookies that are perfect for the holidays or any time you crave something sweet.


Ingredients

  • 1 1/2 cup almond flour
  • 5 tablespoons tapioca flour
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 2 tablespoons coconut oil (melted and cooled)
  • 1/4 cup maple syrup
  • 1 tablespoon blackstrap molasses

Instructions

  1. Preheat the oven to 350°F (180°C). Line a large baking sheet with parchment paper. Lightly oil the paper with cooking oil spray.
  2. In a mixing bowl, whisk together the almond flour, tapioca flour, baking soda, ground ginger, and cinnamon until well combined.
  3. Add the maple syrup, melted coconut oil, and molasses. Stir with a rubber spatula, or knead with your hands to form a consistent cookie dough ball. The dough should be sticky but easy to combine into a ball.
  4. Set the dough aside for 10 minutes to rest. This makes it easier to work with.
  5. Place a large piece of parchment paper on your work surface. Put the cookie dough in the center and cover with another piece of parchment paper on top.
  6. Use a rolling pin to roll out the dough between the papers. Roll to about 1/4-inch thick for soft, chewy cookies. Roll thinner for crispier cookies.
  7. Use a gingerbread cookie cutter to cut out shapes and carefully transfer them to the prepared baking sheet.
  8. Gather the leftover dough scraps, reform into a ball, and repeat the rolling and cutting process until all dough is used.
  9. Bake for 8-9 minutes at 350°F (180°C) until just golden brown for a soft, chewy center. Bake for 10-11 minutes for darker, crispier cookies.
  10. Let the cookies cool on the baking sheet for 10 minutes, then transfer to a cooling rack to cool completely.
  11. Decorate with vegan royal icing if desired once cookies are completely cooled.

Notes

  • This recipe can be easily customized by adding your favorite spices or icing.
  • For a less grittier texture, use finely ground almond flour.
