Description
Delicious banana fritters that are easy to make and perfect for breakfast or dessert.
Ingredients

- 2 eggs (room temperature)
- 1/2 cup milk (room temperature)
- 1 teaspoon vanilla
- 1 tablespoon unsalted butter (melted)
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 3 ripe bananas (chopped)
- Vegetable or canola oil for frying
- 1 1/4 cups powdered sugar
- 3–4 tablespoons milk
- 1/2 teaspoon vanilla
- pinch of cinnamon (optional)
Instructions
- In a medium bowl, combine the eggs, milk, vanilla, and melted butter. Set aside.
- In a separate large bowl, whisk together the flour, baking powder, brown sugar, salt, and cinnamon.
- Add the egg mixture to the flour mixture, stirring until smooth.
- Fold in chopped bananas. Don’t overmix.
- Fill a Dutch oven/cast iron pot with at least 2 inches of vegetable oil and heat on medium-high use a candy thermometer to know when it reaches 350°F.
- Using a tablespoon or a cookie scoop, dollop the batter into the oil, cooking 4-5 at a time. Cook the fritters, turning them over, for about 2 minutes per side for a total of about 3-4 minutes until deep golden brown. (to test for doneness insert a toothpick into the center to see if it comes out clean)
- Remove fritters from the oil with the spider tool and place them on a tray lined with paper towels.
- Make the glaze by combining powdered sugar, milk, and vanilla.
- Let the fritters cool slightly, then dip in the glaze. Serve warm.
Notes
- For best results, use ripe bananas for a sweeter flavor.
- The fritters can be stored in an airtight container for up to 3 days.
