  • 8 oz (225 g) Cajun sausage (Andouille or your preferred type), sliced
  • 1 cup (150 g) bell peppers (red and green), sliced
  • 1 small onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups (200 g) shredded cheese (cheddar, Monterey Jack, or a blend)
  • Sour cream
  • Salsa
  • Fresh cilantro (optional)
  • Avocado slices (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Wait until you see the oil shimmer, indicating it’s hot enough for cooking.
  2. Add the sliced Cajun sausage to the skillet and sauté for about 5 minutes. You want the sausage to brown nicely on the edges; look for a deep golden color.
  3. Incorporate the sliced bell peppers and onion into the skillet. Cook for another 4-5 minutes until the vegetables are tender and vibrant in color. Stir frequently to prevent burning.
  4. Sprinkle in 1 teaspoon of Cajun seasoning and 1 teaspoon of garlic powder. Mix well and cook for an additional 1-2 minutes, allowing the spices to coat the sausage and veggies evenly.
  5. Remove the sausage mixture from the skillet and set it aside. Wipe the skillet clean, then return it to the heat.
  6. Place one flour tortilla in the skillet and add a generous layer of the sausage mixture on one half of the tortilla. Top that with ½ cup of shredded cheese.
  7. Fold the tortilla over to create a half-moon shape. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Keep an eye on it to avoid burning!
  8. Once cooked, transfer the quesadilla to a cutting board and let it rest for a minute. This helps the cheese set slightly, making it easier to cut.
  9. Repeat the process with the remaining tortillas and filling. You can keep the finished quesadillas warm in a low oven (about 200°F or 93°C) while you finish cooking the rest.
  10. Slice the quesadillas into wedges and serve with sour cream, salsa, fresh cilantro, and avocado slices on the side.
