A rich and creamy side dish featuring layers of thinly sliced potatoes and a cheesy sauce.

- 4 lbs russet potatoes, peeled and thinly sliced (about 1/8-inch thick)
- 1/2 cup unsalted butter
- 1 medium yellow onion, finely chopped
- 4 cloves garlic, minced
- 1/3 cup all-purpose flour
- 2 cups chicken or vegetable broth
- 2 cups heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 3 cups shredded sharp cheddar cheese, divided
- 1 cup shredded Parmesan cheese
- Fresh parsley or chives for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet or Dutch oven, melt butter over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
- Whisk in flour and cook for 1-2 minutes until golden. Slowly whisk in broth and heavy cream. Bring to a simmer, whisking constantly until thickened, about 3-4 minutes.
- Remove from heat. Stir in salt, pepper, nutmeg, 2 cups of cheddar cheese, and all of the Parmesan cheese. Stir until cheese is melted and sauce is smooth.
- Arrange half of the sliced potatoes in the prepared baking dish, slightly overlapping. Pour half of the cheese sauce over the potatoes. Repeat with remaining potatoes and sauce.
- Cover dish with foil and bake for 45 minutes. Remove foil, sprinkle with remaining 1 cup of cheddar cheese, and bake uncovered for another 20-25 minutes, or until potatoes are tender and top is golden brown and bubbly.
- Let stand for 10-15 minutes before serving. Garnish with fresh parsley or chives if desired.
Notes
- For added flavor, consider using a mix of herbs or adding some heat with red pepper flakes.
- Letting the dish sit before serving enhances the flavor and helps with slicing.
