Description

A rich and creamy side dish featuring layers of thinly sliced potatoes and a cheesy sauce.


Ingredients

  • 4 lbs russet potatoes, peeled and thinly sliced (about 1/8-inch thick)
  • 1/2 cup unsalted butter
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 2 cups chicken or vegetable broth
  • 2 cups heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 3 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded Parmesan cheese
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet or Dutch oven, melt butter over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
  3. Whisk in flour and cook for 1-2 minutes until golden. Slowly whisk in broth and heavy cream. Bring to a simmer, whisking constantly until thickened, about 3-4 minutes.
  4. Remove from heat. Stir in salt, pepper, nutmeg, 2 cups of cheddar cheese, and all of the Parmesan cheese. Stir until cheese is melted and sauce is smooth.
  5. Arrange half of the sliced potatoes in the prepared baking dish, slightly overlapping. Pour half of the cheese sauce over the potatoes. Repeat with remaining potatoes and sauce.
  6. Cover dish with foil and bake for 45 minutes. Remove foil, sprinkle with remaining 1 cup of cheddar cheese, and bake uncovered for another 20-25 minutes, or until potatoes are tender and top is golden brown and bubbly.
  7. Let stand for 10-15 minutes before serving. Garnish with fresh parsley or chives if desired.

  • For added flavor, consider using a mix of herbs or adding some heat with red pepper flakes.
