Description

This delicious Cinnamon Sugar Rice Chex mix is the perfect snack for any occasion.


Ingredients

  • 8 cups Rice Chex cereal
  • ½ cup butter
  • ½ cup brown sugar
  • ¼ cup granulated white sugar
  • 2 tsp ground cinnamon

Instructions

  1. Preheat the oven to 275°F. Line a large baking sheet with parchment paper.
  2. In a small bowl, mix together ¼ cup granulated sugar and 2 tsp ground cinnamon. Set aside.
  3. In a glass measuring cup, melt ½ cup butter in the microwave.
  4. Stir in ½ cup brown sugar, then microwave for 20–30 seconds. Whisk well.
  5. Microwave again for 20–30 seconds, watching carefully so it doesn’t bubble over. Whisk until smooth and glossy. Repeat once more if needed until it resembles a loose caramel sauce.
  6. Pour 8 cups Rice Chex cereal into a large bowl. Drizzle the caramel sauce over the cereal and gently fold until evenly coated.
  7. Spread the coated cereal onto the prepared baking sheet in an even layer.
  8. Sprinkle the cinnamon sugar mixture evenly over the top.
  9. Bake at 275°F for 45 minutes, stirring every 15 minutes, lifting and turning the cereal with a spatula.
  10. Remove from the oven and let cool completely before serving. The mix will crisp up as it cools.
