A warm and healthy vegetable pasta soup that’s quick to prepare and delicious!
Ingredients

- 1 cup pasta (shells or elbows)
- 4 cups vegetable broth
- 1 medium carrot (diced)
- 1 stalk celery (diced)
- 2 cloves garlic (minced)
- 2 cups fresh spinach or kale
- ½ cup grated Parmesan cheese
- 1 tablespoon extra virgin olive oil
- Salt & pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add minced garlic, sauté for 30 seconds, then add diced carrots and celery; cook until slightly softened.
- Pour in vegetable broth, season with salt and pepper, and bring to a gentle boil.
- Add pasta and cook according to package instructions until al dente (about 8–10 minutes).
- Stir in spinach or kale just before serving until wilted.
- Serve hot, topped with grated Parmesan cheese.
Notes
- This soup can be customized with your favorite vegetables.
- For a vegan option, omit the Parmesan or use a plant-based alternative.
