A delicious and quick recipe for peanut noodles using either spaghetti or rice noodles, perfect for a light meal or snack.

- 8 oz spaghetti or rice noodles
- 1/2 cup creamy or chunky peanut butter
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey or maple syrup
- 2 cloves garlic, minced
- 1 tbsp lime juice
- Fresh cilantro for garnish (optional)
- Chili flakes for heat (optional)
Instructions
- Boil water in a large pot and cook noodles until al dente (8-10 minutes). Drain and rinse under cold water.
- In a bowl, whisk together peanut butter, soy sauce, honey or maple syrup, minced garlic, and lime juice until smooth. Adjust consistency with warm water if needed.
- Add cooled noodles to the sauce mixture and toss gently to coat evenly.
- For extra flavor, sprinkle with chili flakes and garnish with fresh cilantro before serving.
Notes
- Adjust the amount of chili flakes based on your heat preference.
- Best served immediately but can be stored in the refrigerator for up to 2 days.
