Description

A vibrant salad with grilled chicken, ripe mangoes, and a zesty lime dressing.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 tsp chipotle powder
  • 2 ripe mangoes, diced
  • 1/4 cup freshly squeezed lime juice
  • 6 cups mixed greens
  • 1/2 red onion, thinly sliced
  • 2 tbsp honey
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat your grill or skillet over medium-high heat. Season chicken with chipotle powder, salt, and pepper. Grill for 6-7 minutes per side until fully cooked.
  2. In a small bowl, whisk together lime juice, honey, and chopped cilantro until smooth.
  3. Dice ripe mangoes and slice red onion while the chicken cools slightly.
  4. Slice the grilled chicken into strips. In a large bowl, combine mixed greens, mango cubes, red onion slices, and chicken strips.
  5. Drizzle dressing over the salad mixture and toss gently to coat evenly. Serve immediately.

  • Feel free to adjust the spice level by adding more or less chipotle powder.
