A vibrant salad with grilled chicken, ripe mangoes, and a zesty lime dressing.
Ingredients

- 3–4 boneless, skinless chicken breasts
- 2 tsp chipotle powder
- 2 ripe mangoes, diced
- 1/4 cup freshly squeezed lime juice
- 6 cups mixed greens
- 1/2 red onion, thinly sliced
- 2 tbsp honey
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat your grill or skillet over medium-high heat. Season chicken with chipotle powder, salt, and pepper. Grill for 6-7 minutes per side until fully cooked.
- In a small bowl, whisk together lime juice, honey, and chopped cilantro until smooth.
- Dice ripe mangoes and slice red onion while the chicken cools slightly.
- Slice the grilled chicken into strips. In a large bowl, combine mixed greens, mango cubes, red onion slices, and chicken strips.
- Drizzle dressing over the salad mixture and toss gently to coat evenly. Serve immediately.
Notes
- Feel free to adjust the spice level by adding more or less chipotle powder.
- This salad is best served fresh but can be stored in the refrigerator for a day.
