Description

A delicious and creamy chicken and mushroom pasta dish that is perfect for a comforting meal.


Ingredients

  • 4 tablespoons butter
  • 4 large onions, sliced
  • 2 tablespoons oil
  • 1 pound boneless and skinless chicken thighs (or breasts), cut into bite-sized pieces
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon (smoked) paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces mushrooms, sliced (optional)
  • 4 cloves garlic, chopped
  • 1 teaspoon thyme, chopped (or 1/2 teaspoon dried)
  • 3 cups beef broth
  • 8 ounces pasta (gluten-free for gluten-free)
  • 1 tablespoon worcestershire sauce (gluten-free for gluten-free) (optional)
  • 1 tablespoon balsamic vinegar (optional)
  • 1 tablespoon dijon mustard (optional)
  • 1/2 cup heavy/whipping cream
  • 1/4 cup parmigiano reggiano (parmesan cheese), grated
  • 1 cup gruyere cheese (or swiss), shredded (optional)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions and cook until they are translucent.
  2. Add the oil and the chicken pieces, cooking until the chicken is browned.
  3. Stir in the onion powder, garlic powder, smoked paprika, salt, and pepper.
  4. If using, add the sliced mushrooms and garlic, cooking until softened.
  5. Add thyme, beef broth, pasta, worcestershire sauce, balsamic vinegar, and dijon mustard (if using). Bring to a boil, then simmer until the pasta is cooked.
  6. Stir in the heavy cream and cheeses until melted and combined.

Notes

  • This recipe can easily be adjusted for dietary preferences, using gluten-free pasta or omitting optional ingredients as desired.
