- 4 tablespoons butter
- 4 large onions, sliced
- 2 tablespoons oil
- 1 pound boneless and skinless chicken thighs (or breasts), cut into bite-sized pieces
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon (smoked) paprika
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 8 ounces mushrooms, sliced (optional)
- 4 cloves garlic, chopped
- 1 teaspoon thyme, chopped (or 1/2 teaspoon dried)
- 3 cups beef broth
- 8 ounces pasta (gluten-free for gluten-free)
- 1 tablespoon worcestershire sauce (gluten-free for gluten-free) (optional)
- 1 tablespoon balsamic vinegar (optional)
- 1 tablespoon dijon mustard (optional)
- 1/2 cup heavy/whipping cream
- 1/4 cup parmigiano reggiano (parmesan cheese), grated
- 1 cup gruyere cheese (or swiss), shredded (optional)
Instructions
- In a large pot, melt the butter over medium heat. Add the onions and cook until they are translucent.
- Add the oil and the chicken pieces, cooking until the chicken is browned.
- Stir in the onion powder, garlic powder, smoked paprika, salt, and pepper.
- If using, add the sliced mushrooms and garlic, cooking until softened.
- Add thyme, beef broth, pasta, worcestershire sauce, balsamic vinegar, and dijon mustard (if using). Bring to a boil, then simmer until the pasta is cooked.
- Stir in the heavy cream and cheeses until melted and combined.
Notes
- This recipe can easily be adjusted for dietary preferences, using gluten-free pasta or omitting optional ingredients as desired.
- For added flavor, consider using fresh herbs or adjusting the spices according to your taste.
