Ingredients

  • 8 ounces semi-sweet chocolate
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 24 ounces cream cheese
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 4 ounces semi-sweet chocolate
  • 2 tablespoons mini chocolate chips
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat the oven to 325°F and grease a 9-inch springform pan. Line the bottom with parchment paper.
  2. Melt the butter and 8 ounces semi-sweet chocolate together until smooth, then let cool slightly.
  3. Whisk in 1 cup granulated sugar and brown sugar. Add 3 eggs and 2 teaspoons vanilla extract, mixing until glossy.
  4. Stir in the flour, cocoa powder, and salt just until combined.
  5. Spread the brownie batter into the prepared pan and bake for 18 to 20 minutes, until just set.
  6. Beat the cream cheese and 3/4 cup granulated sugar until smooth.
  7. Mix in the sour cream, 1/4 cup heavy cream, 2 eggs, and 1 teaspoon vanilla extract until creamy and fully combined.
  8. Pour the cheesecake filling over the brownie layer and smooth the top.
  9. Bake for 40 to 45 minutes, until the edges are set and the center still has a slight wobble.
  10. Turn off the oven, crack the door, and let the cheesecake rest for 20 minutes. Cool completely, then chill for at least 6 hours or overnight.
  11. Heat 1/2 cup heavy cream until warm, pour over 4 ounces semi-sweet chocolate, and stir until smooth.
  12. Pour the ganache over the chilled cheesecake, then top with mini chocolate chips and powdered sugar.
  13. Chill for 20 more minutes before slicing and serving.
