- 8 ounces semi-sweet chocolate

- 1/2 cup brown sugar

- 1/2 cup heavy cream
- 4 ounces semi-sweet chocolate
- 2 tablespoons mini chocolate chips
- 1 tablespoon powdered sugar
Instructions
- Preheat the oven to 325°F and grease a 9-inch springform pan. Line the bottom with parchment paper.
- Melt the butter and 8 ounces semi-sweet chocolate together until smooth, then let cool slightly.
- Whisk in 1 cup granulated sugar and brown sugar. Add 3 eggs and 2 teaspoons vanilla extract, mixing until glossy.
- Stir in the flour, cocoa powder, and salt just until combined.
- Spread the brownie batter into the prepared pan and bake for 18 to 20 minutes, until just set.
- Beat the cream cheese and 3/4 cup granulated sugar until smooth.
- Mix in the sour cream, 1/4 cup heavy cream, 2 eggs, and 1 teaspoon vanilla extract until creamy and fully combined.
- Pour the cheesecake filling over the brownie layer and smooth the top.
- Bake for 40 to 45 minutes, until the edges are set and the center still has a slight wobble.
- Turn off the oven, crack the door, and let the cheesecake rest for 20 minutes. Cool completely, then chill for at least 6 hours or overnight.
- Heat 1/2 cup heavy cream until warm, pour over 4 ounces semi-sweet chocolate, and stir until smooth.
- Pour the ganache over the chilled cheesecake, then top with mini chocolate chips and powdered sugar.
- Chill for 20 more minutes before slicing and serving.

- For best results, use room temperature ingredients.
- Chilling overnight gives the best flavor and texture.
- Serve with whipped cream for an extra treat!
