Description

Creating flavorful Ground Beef Enchiladas can be simple if you follow these steps.

Ingredients

Scale
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups enchilada sauce (store-bought or homemade)
  • 8 corn or flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (optional, for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the Beef: In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet. Cook until browned, breaking it apart with a wooden spoon.
  4. Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes until the spices are fragrant.
  5. In a separate skillet, warm the tortillas for about 30 seconds on each side to make them pliable.
  6. Spoon 2-3 tablespoons of the beef mixture into each tortilla. Add a sprinkle of cheese, then roll the tortilla tightly.
  7. Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
  8. Place the rolled enchiladas seam-side down in the baking dish.
  9. Pour the remaining enchilada sauce over the top of the enchiladas. Sprinkle the remaining cheese evenly on top.
  10. Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  11. Once out of the oven, let the enchiladas cool for a few minutes. Garnish with chopped cilantro.
  12. Slice and serve the enchiladas warm with sour cream, if desired.
