- 1 small onion, chopped

- 8 corn or flour tortillas

Instructions
- Preheat your oven to 375°F (190°C).
- Cook the Beef: In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet. Cook until browned, breaking it apart with a wooden spoon.
- Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes until the spices are fragrant.
- In a separate skillet, warm the tortillas for about 30 seconds on each side to make them pliable.
- Spoon 2-3 tablespoons of the beef mixture into each tortilla. Add a sprinkle of cheese, then roll the tortilla tightly.
- Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
- Place the rolled enchiladas seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top of the enchiladas. Sprinkle the remaining cheese evenly on top.
- Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Once out of the oven, let the enchiladas cool for a few minutes. Garnish with chopped cilantro.
- Slice and serve the enchiladas warm with sour cream, if desired.
