Ingredients

- 1 lb (450g) lean ground beef
- 1 onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 1/2 head cabbage, chopped
- 1 can (14 oz / 411g) diced tomatoes
- 6 cups beef broth
- 1 tsp dried thyme
- 1 tsp garlic powder
- Salt to taste
- Pepper to taste
Instructions
- In a large soup pot, brown the beef and onion over medium heat; drain fat.
- Add carrots and celery; cook for 5 minutes until slightly softened.
- Stir in cabbage, diced tomatoes (undrained), broth, thyme, garlic powder, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Simmer for 25-30 minutes until all vegetables are tender.
- Taste and adjust seasoning before serving.
Notes
- Feel free to add any other vegetables you have on hand.
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
