- 1 cup water
- ½ cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1 pinch of salt
- 2 cups whole milk
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 4 large egg yolks
- ¼ cup cornstarch
- ½ cup unsalted butter (softened)
- Powdered sugar for dusting (optional)
- Whipped cream or fresh fruit for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a saucepan, combine the water and butter. Bring to a boil over medium heat.
- Once the mixture is boiling, add the flour and salt all at once. Stir vigorously until the dough forms a ball and pulls away from the sides of the pan. Remove from heat.
- Allow the dough to cool for about 5 minutes. Add eggs, one at a time, mixing thoroughly after each addition until smooth and glossy.
- Divide the dough in half. Spread one half evenly on the prepared baking sheet, creating a rectangle.
- Place in the oven and bake for 25-30 minutes until golden and puffed. Repeat the process for the second half of the dough. Let the layers cool completely.
- In a saucepan, heat the milk and sugar over medium heat until the sugar dissolves.
- In a bowl, whisk together egg yolks and cornstarch until smooth. Gradually mix in a small amount of warm milk mixture, then add it back to the saucepan.
- Cook over medium heat, stirring constantly until the mixture thickens. Remove from heat, and stir in vanilla and softened butter until fully blended.
- Transfer the custard to a bowl, cover with plastic wrap directly on the custard surface to prevent a skin from forming, and allow it to cool to room temperature.
- Once both layers and custard are completely cool, place one pastry layer on a serving platter. Spread the custard evenly over the first layer, then top with the second pastry layer.
- Dust the top layer with powdered sugar. Optionally, serve with whipped cream or fresh fruit for added flavor and presentation.

- Cooling times for both the pastry layers and custard are important for the best texture.
