Ingredients

Scale
  • 2 cups Glutinous Rice (soaked for 4 hours)
  • 1/2 cup Coconut Milk (full-fat preferred)
  • 8 pieces Pandan Leaves (fresh for best flavor)
  • 1/4 cup Sugar (adjust to taste)
  • a pinch Salt (to balance sweetness)
  • 1/2 cup Shredded Coconut (optional, toast for flavor)
  • 2 tablespoons Toasted Sesame Seeds (optional)

Instructions

  1. Rinse 2 cups of glutinous rice under cold water until clear. Soak in warm water for 4 hours.
  2. In a blender, combine 8 fresh pandan leaves with 1/2 cup of coconut milk. Blend until smooth.
  3. Drain the soaked rice and mix it with the pandan mixture, 1/2 cup coconut milk, 1/4 cup sugar, and a pinch of salt.
  4. Pour the mixture into a lined tray and steam for 20 minutes. Let it rest covered for 10 minutes.
  5. Toast shredded coconut or sesame seeds in a skillet until golden.
