- 4 cod fillets (6–8 oz. each, about 1–1¼ inches thick)
- 6 tablespoons unsalted butter (softened)
- 2 garlic cloves (minced)
- 2 tablespoons fresh parsley (minced)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 2 tablespoons lemon juice
- 6–8 lemon slices
Instructions
- Preheat oven to 400°F. Lightly grease a 9×13-inch baking dish.
- Pat the cod fillets dry with paper towels to remove excess moisture. Arrange them in a single layer in the prepared baking dish.
- In a small bowl, combine the softened butter, minced garlic, parsley, salt, pepper, and paprika. Mix until smooth and well blended.
- Spread about 1½ tablespoons of the butter mixture evenly over the top of each fillet. Drizzle the lemon juice over the fish, then top each piece with 1-2 lemon slices.
- Bake for 12-15 minutes, or until the cod is opaque, flakes easily with a fork, and reaches an internal temperature of 140°F.
- Remove from the oven and let rest for 2-3 minutes. Spoon the pan juices over the fillets before serving, if desired.
