Description

Ingredients

  • 16 ounces salmon (4 filets)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons butter (melted)
  • 2 teaspoons minced garlic
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 tablespoon parsley
  • 1 small lemon (sliced)

Instructions

  1. Preheat the oven to low broil, and position the oven rack to the center of the oven.
  2. Prepare the salmon by removing any bones or skin, then cut the salmon fillet into 4 ounce individual portions. Pat dry with a paper towel, season with salt and pepper, and place on a baking sheet lined with aluminum foil.
  3. In a small bowl, mix together the melted butter, minced garlic, lemon zest, and lemon juice. Use a basting brush to brush all sides of the salmon.
  4. Broil the salmon filets for 6 minutes, then check the doneness of salmon—it should flake easily with a fork. Cook for an additional 1-2 minutes if necessary, then remove from the oven and let rest for 5 minutes.
  5. To serve, drizzle the drippings over the filets and garnish with fresh lemon slices and minced parsley. Enjoy!
