Crispy Hash Brown Cups with Boursin and Smoked Salmon

Description

Deliciously crispy hash brown cups filled with creamy Boursin cheese and topped with smoked salmon and fresh herbs.


Ingredients

Scale
  • 48 pieces frozen tater tots
  • 1 spray olive oil
  • to taste everything bagel seasoning
  • 1 box (5 /150g) Boursin cheese
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lemon juice
  • Zest of 1/2 a lemon
  • to taste black pepper
  • 34oz (100 – 120g) smoked salmon, sliced into strips
  • to taste fresh chives, finely sliced
  • to taste pickled red onion, optional

Instructions

  1. Heat your oven to 400°F (200°C fan) and lightly grease a mini muffin pan with olive oil spray. Arrange 2 frozen tater tots in each hole.
  2. Transfer to the oven and bake for 10 minutes, until softened but not crispy.
  3. Remove the pan from the oven and use the back of a teaspoon to press the tots into little cup shapes. Sprinkle the bottom of each cup with everything bagel seasoning.
  4. Put the mini muffin pan back into the oven for 15 minutes, until golden and crispy around the edges. Let cool for 5 minutes before removing.
  5. In a bowl, mix the Boursin cheese, Greek yogurt, lemon juice, half the lemon zest, and black pepper until soft and fluffy.
  6. Transfer the mixture to a piping bag or spoon it into the hash brown cups.
  7. Top with smoked salmon, scatter with everything bagel seasoning, chives, remaining lemon zest, and a piece of pickled red onion or capers if using. Serve right away.

Notes

  • Ensure the tater tots are arranged evenly in the muffin pan for consistent cooking.
  • Optionally, use fresh dill instead of chives for a different flavor profile.
