- Preheat your oven to 350°F (175°C). This ensures that your cobbler bakes evenly and that the topping becomes golden brown.
- In a large mixing bowl, combine the sliced fresh peaches, 1/2 cup granulated sugar, 2 tablespoons cornstarch, 1 teaspoon vanilla extract, 1 teaspoon lemon juice, 1 teaspoon ground cinnamon, 1/4 teaspoon nutmeg, and a pinch of salt. Stir gently until the peaches are well-coated, and set aside for about 10 minutes to be careful not to overmix, as this can lead to tough biscuits.
- Pour the peach filling into a greased 9×13-inch baking dish, spreading it evenly. Drop spoonfuls of the biscuit topping over the peaches, leaving some gaps for the filling to bubble through. This creates a rustic look and ensures the topping cooks evenly.
- If desired, sprinkle the top with cinnamon sugar for extra sweetness.
