Description

A delicious cake made with almond flour and ripe pears, topped with apricot jam for a delightful glaze.


Ingredients

  • 150 grams all-purpose flour
  • 150 grams granulated sugar
  • 100 grams unsalted butter, softened
  • 2 large eggs
  • 100 grams almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon almond extract
  • 2 ripe pears, peeled, cored, and thinly sliced
  • 2 tablespoons apricot jam (for glaze)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line a round 9-inch (23 cm) cake pan with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition. Add the almond extract and mix until combined.
  4. In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Gently fold in half of the sliced pears into the batter, reserving the other half for the top of the cake.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula. Arrange the remaining pear slices on top in a decorative pattern.
  8. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, heat the apricot jam in a small saucepan over low heat until melted. Remove from heat.
  10. Once the cake is done, let it cool in the pan for about 10 minutes, then transfer to a wire rack. Brush the melted apricot jam over the top for a shiny glaze.
  11. Once completely cool, dust with powdered sugar if desired. Slice and serve with tea or coffee.

  • For a more intense almond flavor, consider adding sliced almonds on top before baking.
