- 2 cups shredded sharp cheddar cheese
- 4 oz cream cheese
- 1 cup evaporated milk
- 1 can diced tomatoes with green chiles (10 oz)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper (optional)
Instructions
- Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes, stirring constantly.
- Slowly whisk in the evaporated milk. Continue to whisk until the mixture begins to thicken.
- Add cream cheese and stir until melted and smooth.
- Add cheddar cheese a handful at a time, stirring until fully melted and combined.
- Mix in the diced tomatoes with green chiles, garlic powder, onion powder, and cayenne pepper.
- Heat through, then transfer to a bowl or slow cooker and serve warm.
Notes
- This dip can be served with tortilla chips, crackers, or vegetables.
- For a spicier dip, increase the amount of cayenne pepper.
