Ingredients

  • 1 cup dried blueberries
  • 1 tablespoon water
  • 8 ounces white chocolate, finely chopped (for the filling)
  • 3 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 8 ounces white chocolate (for coating)
  • Optional: purple or blue sprinkles for decoration

Instructions

  1. Prepare the blueberries: In a small saucepan, combine the dried blueberries with water. Heat over low-medium until the blueberries begin to soften and absorb the water—this takes about 2–3 minutes. Stir occasionally. Let them cool slightly.
  2. Make the filling: In a food processor or high-powered blender, pulse the softened blueberries until roughly chopped. Add the cream cheese, vanilla extract, and 8 ounces of chopped white chocolate. Pulse until the mixture becomes smooth and creamy. The filling will turn a lovely light purple hue.
  3. Chill the filling: Transfer the mixture to a bowl and refrigerate for 1–2 hours or until firm enough to roll into balls.
  4. Roll into truffles: Once firm, scoop out heaping teaspoons of the mixture and roll into smooth balls. Place them on a parchment-lined tray. If they soften too much during shaping, pop them back in the fridge for 10 minutes.
  5. Coat in white chocolate: Melt the remaining 8 ounces of white chocolate in a double boiler or microwave in short bursts, stirring in between until smooth. Using a fork or dipping tool, lower each blueberry truffle into the melted chocolate to coat. Let excess drip off, then transfer to parchment paper.
  6. Decorate and set: If desired, sprinkle with purple or blue sprinkles while the coating is still wet. Allow to set completely at room temperature or refrigerate until firm.
